Avocado Brownies

When life gives you avocados, don’t make an ordinary avo toast. You can indulge guilt-free (and gluten-free) instead. We all know an avocado has a lifespan of about five minutes. So if you happen to have ripe avocados (not overripe, else they will taste bitter) and some chocolate in your house, check out these super-duper easy, juicy brownies and pair them with your favourite cup of coffee. Welcome to chocolate heaven.
Ingredients
- 200g dark chocolate
- 2 avocados – medium & ripe
- 3 eggs
- 2 tsp baking powder
- 1 tsp vanilla
- 150g brown sugar
- 80 g rice flour
- 60g dark cocoa powder, unsweetened
- pinch of salt
- Optional: walnuts
Instructions
- Preheat the oven to 180°C.
- Smash the avos with a fork. Make sure there are no little chunks left.
- Mix in the eggs and cocoa powder.
- Melt the chocolate, add it to the mixture and blend well. I do not use a blender, a wooden spoon will do.
- Add the rest of the dry ingredients and give it a good stir. The texture should be nice and creamy now.
- Fill out a tray ca. 20×30 cm or any other small cake form with parchment paper.
- Pour the batter into the form. You can add walnuts, pistachios or even chocolate chunks if you wish.
- Bake around 20 mins. The brownies should remain a bit sticky and not too dry. Enjoy best when still a bit warm and runny.
