Strawberry Banana Flapjacks

These easy-peasy flapjacks provide you with almost 30g of carbs per piece and barely contain any fibre and therefore they are just perfect for brekkie before training. Once cooled, you can store them in an air-tight container for up to tow days or pack them for the road.

Ingredients

For the flapjacks:

  • 1 large banana
  • 1 large egg
  • 1/2 cup milk
  • 2 tbsp agave syrup
  • 1 cup rice flour
  • 1/2 tsp cinnamon
  • 1 tsp baking powder
  • optional: 1 tsp corn starch – makes them more firm

For the topping:

  • 150g strawberries (fresh or frozen)
  • 1 tbsp agave syrup

Instructions

  1. Mash the banana with a fork.
  2. Add all wet ingredients and mix.
  3. Mix dry ingredients in a separate bowl and add then to the rest, whisking slowly.
  4. Let the batter rest for 10 mins.
  5. Heat up some coconut oil in the pan and fry the flapjacks until golden brown.
  6. For the topping, boil some strawberries with agave syrup on low heat and mash gently with a fork until you get the texture you want. Add a little water if you want the topping to be more runny.
